The countryside summer escape truly comes into its own with the nature-inspired, farm-to-table cuisine of The Summerhouse Dining Room, in which fresh, seasonal produce, and simple yet refined techniques are used to construct inventive flavors.

The Summerhouse Dining Room connects with a farming collective of growers, producers and kelongs, to allow value-added and sustainable practices to be selected over others. This back-to-basic approach also sees garnishes and herbs used in the restaurant being harvested from the in-house edible garden, providing unrivalled freshness and provenance to the table.

"The Iberico Pork is excellent too. This large slab of meat is partnered with caramelised onion infused with chamomile, alongside pistachio nuts and chervil beurre blanc. We are told that the meat is smoked in the inka oven, and then finished sous vide. The results of about 80 hours of cooking? Pork that's superbly tender and satisfying.

Oh, The Summerhouse, you're making all of our black-and-white bungalow dreams come true We're talking plantation windows that just don't stop; tropical foliage; hypnotic ceiling fans. Make the little trip to Seletar folks, because if you haven't discovered this gem of a restaurant in Singapore, it's time you do so..

Loving the new brunch menu at The Summerhouse Dining Room. We enjoyed our meal with a bottle of Bliss Family Vineyards Chardonnay from their cute little wine cellar

The Summerhouse Dining Room is as cosy and intimate as you need for a quiet respite from urban life. It might be a tough commute to the park if you don't drive, but we suppose it's a necessary sacrifice for the charming heritage architecture and undulating greenery

While the Art Decor-style colonial decor is pretty slick, you come here for the food particularly if you're a real foodie with a conscience who wants to savour every well-sourced morsel of the imaginative menu. Eating here is a real experience so, go hungry, go with an open mind and feast away
